Delicious and healthy gluten-free apple oatmeal bars that are perfect for breakfast or a snack.
Ingredients

- 2 cups gluten-free rolled oats
- 1 cup unsweetened applesauce
- 1/2 cup honey or maple syrup
- 1/2 cup almond butter
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 cup diced apples
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
- In a large bowl, mix together the rolled oats, applesauce, honey or maple syrup, almond butter, cinnamon, and salt until well combined.
- Fold in the diced apples and chopped nuts if using.
- Spread the mixture evenly in the prepared baking dish.
- Bake for 25-30 minutes or until the edges are golden brown.
- Allow to cool before cutting into bars.
Notes
- Store in an airtight container for up to a week.
- These bars can be frozen for longer storage.
- Feel free to add other mix-ins like raisins or chocolate chips.
