- 2 boneless, skinless chicken breasts
- 1 cup cooked quinoa or rice
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup kalamata olives, pitted and sliced
- 2 tablespoons olive oil
- Juice of 1 lemon
- 1 garlic clove, minced
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat your non-stick skillet over medium heat and add olive oil. Season the chicken breasts with salt and pepper, then add them to the skillet. Cook for about 6–7 minutes per side until golden and cooked through. Remove from heat and allow to rest before slicing.
- In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until combined. Adjust seasoning as desired.
- In a large serving bowl, layer the cooked quinoa or rice, followed by the sliced chicken. Artfully arrange the cherry tomatoes, cucumber, red onion, feta cheese, and kalamata olives atop the chicken.
- Drizzle the dressing over your bowl, and gently toss the ingredients together for an even coating.
- Sprinkle freshly chopped parsley over the top. Serve immediately.
Notes
Make-ahead by prepping chicken and dressing the day before. Store in airtight containers in the fridge.
