Description

Indulge in the creamy, golden goodness of Greek Orzo, where each bite offers a delightful blend of tender pasta enveloped in a rich, savory sauce. The dish is adorned with fresh herbs and tangy feta, creating a symphony of flavors that dance on your palate.

Ingredients

  • Orzo Pasta: 1 cup, uncooked
  • Chicken Broth: 2 cups, low-sodium
  • Olive Oil: 2 tablespoons
  • Garlic: 3 cloves, minced
  • Onion: 1 medium, diced
  • Spinach: 2 cups, fresh
  • Feta Cheese: 1/2 cup, crumbled
  • Lemon Juice: 2 tablespoons, freshly squeezed
  • Fresh Dill: 2 tablespoons, chopped
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. In a medium saucepan, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  4. Add the orzo pasta and toast for 2 minutes, stirring frequently.
  5. Pour in the chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 10-12 minutes, or until the orzo is tender and the liquid is absorbed.
  6. Fold in the fresh spinach and cook for 2-3 minutes until wilted.
  7. Remove from heat and stir in the crumbled feta, lemon juice, and fresh dill. Season with salt and pepper to taste.
  8. Serve warm, garnished with additional feta and dill if desired.

Notes

  • This dish can be made ahead of time and stored in the refrigerator for up to 3 days.
  • To reheat, add a splash of chicken broth to loosen the orzo and warm over low heat.
  • For a vegetarian option, substitute vegetable broth for chicken broth.
  • Feel free to add grilled chicken or shrimp for extra protein.
