A refreshing and flavorful Greek Potato Salad made with fresh ingredients and a tangy dressing.
Ingredients

- 2 pounds of potatoes
- 1 cup of cherry tomatoes, halved
- 1 cup of cucumber, diced
- 1/2 cup of red onion, finely chopped
- 1/2 cup of Kalamata olives, pitted and sliced
- 1 cup of feta cheese, crumbled
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- 1 teaspoon of dried oregano
- Salt and pepper to taste
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool.
- Once cooled, cut the potatoes into bite-sized pieces.
- In a large bowl, combine the potatoes, cherry tomatoes, cucumber, red onion, olives, and feta cheese.
- In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- For a vegan version, omit the feta cheese.
- Feel free to add other vegetables like bell peppers or radishes.
- This salad can be made a day in advance for better flavor.
