A refreshing and healthy Greek Quinoa Salad Bowl packed with nutritious ingredients and vibrant flavors.


Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Rinse the quinoa under cold water and drain.
  2. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  3. Remove from heat and let it sit covered for 5 minutes, then fluff with a fork.
  4. In a large bowl, combine cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
  5. Add the cooked quinoa to the bowl and mix well.
  6. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  7. Pour the dressing over the salad and toss to combine.
  8. Serve chilled or at room temperature.

  • Feel free to add grilled chicken or chickpeas for extra protein.
  • This salad can be made ahead of time and stored in the refrigerator for up to 3 days.
