Description

A delicious and tropical grilled chicken dish featuring mango and pineapple, perfect for BBQs.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 ripe mango, diced
  • 1 cup pineapple chunks
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. In a bowl, combine diced mango, pineapple chunks, soy sauce, honey, olive oil, garlic, and ginger to create the marinade.
  2. Place the chicken breasts in a resealable bag and pour the marinade over them. Seal the bag and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken from the marinade and discard the marinade.
  5. Grill the chicken for 6-7 minutes on each side, or until fully cooked and internal temperature reaches 165°F (75°C).
  6. Remove from the grill and let rest for a few minutes.
  7. Garnish with fresh cilantro before serving.

Notes

  • For extra flavor, marinate the chicken overnight.
  • Serve with a side of rice or salad for a complete meal.
  • Adjust the sweetness by adding more or less honey based on your preference.
