  • Diet: Gluten-Free

Description

This Grilled Nectarine Burrata Prosciutto Salad is a delightful medley of flavors and textures. The sweet, caramelized nectarines are perfectly complemented by the creamy burrata and the salty, savory prosciutto, creating a dish that is both refreshing and indulgent.

Ingredients

  • Nectarines: 2 ripe nectarines, halved and pitted
  • Burrata: 8 ounces, torn into pieces
  • Prosciutto: 4 ounces, thinly sliced
  • Arugula: 4 cups, washed and dried
  • Olive Oil: 2 tablespoons, plus more for grilling
  • Balsamic Glaze: 2 tablespoons
  • Salt: to taste
  • Pepper: to taste

Instructions

  1. Preheat the grill to medium-high heat (about 400°F).
  2. Brush the cut sides of the nectarines with olive oil.
  3. Place the nectarines cut-side down on the grill and cook for 3-4 minutes until grill marks appear and they are slightly softened.
  4. Remove the nectarines from the grill and let them cool slightly.
  5. On a large serving platter, arrange the arugula as a base.
  6. Place the grilled nectarines on top of the arugula.
  7. Scatter the torn burrata and prosciutto over the salad.
  8. Drizzle with olive oil and balsamic glaze, then season with salt and pepper to taste.

Notes

  • This salad can be made ahead by grilling the nectarines and storing them in the refrigerator for up to 2 days.
  • Store leftovers in an airtight container in the fridge for up to 1 day; the arugula may wilt.
  • Substitute peaches for nectarines if desired, or use feta cheese instead of burrata for a different flavor profile.
