Ingredients
- Nectarines: 2 ripe nectarines, halved and pitted
- Burrata: 8 ounces, torn into pieces
- Prosciutto: 4 ounces, thinly sliced
- Arugula: 4 cups, washed and dried
- Olive Oil: 2 tablespoons, plus more for grilling
- Balsamic Glaze: 2 tablespoons

Instructions
- Preheat the grill to medium-high heat (about 400°F).
- Brush the cut sides of the nectarines with olive oil.
- Place the nectarines cut-side down on the grill and cook for 3-4 minutes until grill marks appear and they are slightly softened.
- Remove the nectarines from the grill and let them cool slightly.
- On a large serving platter, arrange the arugula as a base.
- Place the grilled nectarines on top of the arugula.
- Scatter the torn burrata and prosciutto over the salad.
- Drizzle with olive oil and balsamic glaze, then season with salt and pepper to taste.
Notes
- This salad can be made ahead by grilling the nectarines and storing them in the refrigerator for up to 2 days.
- Store leftovers in an airtight container in the fridge for up to 1 day; the arugula may wilt.
- Substitute peaches for nectarines if desired, or use feta cheese instead of burrata for a different flavor profile.
