A delicious and refreshing dish featuring grilled peaches and halloumi cheese, drizzled with homemade basil pesto.
Ingredients

- 2 ripe peaches, pitted and cut into wedges
- 200g halloumi cheese, cut into cubes
- 2 tablespoons olive oil
- Salt and pepper to taste
- Fresh basil leaves for garnish
- For the basil pesto: 1 cup fresh basil leaves, 1/4 cup pine nuts, 1/4 cup grated Parmesan cheese, 1/2 cup olive oil, 2 cloves garlic, salt to taste
Instructions
- Preheat the grill to medium-high heat.
- In a food processor, combine basil leaves, pine nuts, Parmesan cheese, garlic, and salt. Blend until finely chopped.
- With the processor running, slowly add olive oil until the mixture is smooth.
- Thread the peach wedges and halloumi cubes onto skewers, alternating between the two.
- Brush the skewers with olive oil and season with salt and pepper.
- Grill the skewers for about 3-4 minutes on each side, or until the halloumi is golden and the peaches are slightly charred.
- Remove from the grill and drizzle with basil pesto before serving.
- Garnish with fresh basil leaves.
Notes
- For a vegan option, substitute halloumi with tofu or another plant-based cheese.
- Make sure to soak wooden skewers in water for 30 minutes before grilling to prevent burning.
- Feel free to add other vegetables like bell peppers or zucchini to the skewers.
