Ingredients

  • 1 lb scallops
  • 1 lb salmon, cut into cubes
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Skewers (wooden or metal)

Instructions

  1. In a bowl, combine olive oil, lemon juice, garlic, paprika, salt, and pepper to create a marinade.
  2. Add shrimp, scallops, and salmon to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.
  3. Preheat the grill to medium-high heat.
  4. Thread the marinated seafood and vegetables onto skewers, alternating between seafood and vegetables.
  5. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the seafood is cooked through and has nice grill marks.
  6. Remove from the grill and serve immediately with lemon wedges.
