- 1 lb scallops
- 1 lb salmon, cut into cubes
- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 teaspoon paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- In a bowl, combine olive oil, lemon juice, garlic, paprika, salt, and pepper to create a marinade.
- Add shrimp, scallops, and salmon to the marinade, ensuring they are well coated. Let marinate for at least 30 minutes.
- Preheat the grill to medium-high heat.
- Thread the marinated seafood and vegetables onto skewers, alternating between seafood and vegetables.
- Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the seafood is cooked through and has nice grill marks.
- Remove from the grill and serve immediately with lemon wedges.
