Description

This Grilled Shrimp Avocado Corn Salsa is a vibrant medley of flavors and textures. The succulent grilled shrimp, perfectly charred, pairs beautifully with the creamy avocado and the sweet crunch of fresh corn, creating a refreshing dish that dances on the palate.

  • Shrimp: 1 pound large shrimp, peeled and deveined
  • Marinade:
    • 2 tablespoons olive oil
    • 1 tablespoon lime juice
    • 2 cloves garlic, minced
    • 1 teaspoon chili powder
    • 1/2 teaspoon cumin
    • Salt and pepper to taste
  • Salsa:
    • 1 cup corn (fresh or grilled)
    • 1 ripe avocado, diced
    • 1/2 red onion, finely chopped
    • 1 jalapeño, seeded and minced
    • 1/4 cup cilantro, chopped
    • 2 tablespoons lime juice
    • Salt to taste

Instructions

  1. In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper to create the marinade.
  2. Add the shrimp to the marinade, ensuring they are well coated. Let them marinate for 15-20 minutes.
  3. Preheat the grill to medium-high heat (about 400°F).
  4. Grill the shrimp for 2-3 minutes on each side until they are opaque and have nice grill marks.
  5. While the shrimp are grilling, prepare the salsa by combining corn, avocado, red onion, jalapeño, cilantro, lime juice, and salt in a bowl.
  6. Once the shrimp are done, remove them from the grill and chop them into bite-sized pieces.
  7. Gently fold the grilled shrimp into the salsa mixture.
  8. Serve immediately or chill for 30 minutes to let the flavors meld.

Notes

  • This dish can be made ahead of time; however, it’s best to add the avocado just before serving to prevent browning.
  • Store leftovers in an airtight container in the refrigerator for up to 2 days.
  • For a spicier kick, add more jalapeño or a dash of hot sauce.
