- Shrimp: 1 pound large shrimp, peeled and deveined
- Marinade:
- 2 tablespoons olive oil

- 2 cloves garlic, minced

- Salsa:
- 1 cup corn (fresh or grilled)
- 1 ripe avocado, diced
- 1/2 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup cilantro, chopped
- 2 tablespoons lime juice
- Salt to taste
Instructions
- In a bowl, combine olive oil, lime juice, garlic, chili powder, cumin, salt, and pepper to create the marinade.
- Add the shrimp to the marinade, ensuring they are well coated. Let them marinate for 15-20 minutes.
- Preheat the grill to medium-high heat (about 400°F).
- Grill the shrimp for 2-3 minutes on each side until they are opaque and have nice grill marks.
- While the shrimp are grilling, prepare the salsa by combining corn, avocado, red onion, jalapeño, cilantro, lime juice, and salt in a bowl.
- Once the shrimp are done, remove them from the grill and chop them into bite-sized pieces.
- Gently fold the grilled shrimp into the salsa mixture.
- Serve immediately or chill for 30 minutes to let the flavors meld.

- This dish can be made ahead of time; however, it’s best to add the avocado just before serving to prevent browning.
