Description

A delicious and healthy grilled shrimp bowl topped with a fresh avocado corn salsa and a creamy sauce.


Ingredients

  • 1 lb shrimp, peeled and deveined
  • 2 avocados, diced
  • 1 cup corn, cooked
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 1/2 cup sour cream
  • 1/4 cup mayonnaise
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, combine shrimp with salt, pepper, and garlic powder.
  3. Grill the shrimp for 2-3 minutes on each side until cooked through.
  4. In another bowl, mix together avocados, corn, cherry tomatoes, red onion, cilantro, and lime juice to make the salsa.
  5. In a separate bowl, whisk together sour cream, mayonnaise, and a pinch of salt and pepper for the creamy sauce.
  6. Assemble the bowl by placing grilled shrimp on a bed of rice or greens, topping with avocado corn salsa and drizzling with creamy sauce.

Notes

  • For a spicier kick, add diced jalapeños to the salsa.
  • Can substitute shrimp with chicken or tofu for a different protein option.
