Ingredients

- 1 lb shrimp, peeled and deveined
- 2 avocados, diced
- 1 cup corn, cooked
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a bowl, combine shrimp with salt, pepper, and garlic powder.
- Grill the shrimp for 2-3 minutes on each side until cooked through.
- In another bowl, mix together avocados, corn, cherry tomatoes, red onion, cilantro, and lime juice to make the salsa.
- In a separate bowl, whisk together sour cream, mayonnaise, and a pinch of salt and pepper for the creamy sauce.
- Assemble the bowl by placing grilled shrimp on a bed of rice or greens, topping with avocado corn salsa and drizzling with creamy sauce.
Notes
- For a spicier kick, add diced jalapeños to the salsa.
- Can substitute shrimp with chicken or tofu for a different protein option.
