Ingredients

Scale
  • For the Steak:
    • 1.5 lbs flank steak
    • 1/4 cup soy sauce
    • 2 tablespoons olive oil
    • 2 tablespoons Worcestershire sauce
    • 2 cloves garlic, minced
    • 1 teaspoon black pepper
  • For the Sauce:
    • 1/2 cup sour cream
    • 1/4 cup mayonnaise
    • 2 tablespoons Dijon mustard
    • 1 tablespoon lemon juice
    • 1 teaspoon garlic powder
  • For the Grilled Zucchini:
    • 2 medium zucchinis, sliced
    • 1 tablespoon olive oil
    • Salt and pepper to taste
  • For Serving:
    • 2 cups cooked rice or quinoa
    • Fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, combine soy sauce, olive oil, Worcestershire sauce, minced garlic, and black pepper. Marinate the flank steak for at least 30 minutes, preferably 2 hours.
  2. Preheat the grill to medium-high heat (about 400°F).
  3. While the grill is heating, prepare the sauce by mixing sour cream, mayonnaise, Dijon mustard, lemon juice, and garlic powder in a bowl. Set aside.
  4. Remove the steak from the marinade and grill for 6-8 minutes on each side for medium-rare, or until desired doneness is reached. Let it rest for 5 minutes before slicing.
  5. Toss the zucchini slices with olive oil, salt, and pepper. Grill for 3-4 minutes on each side until tender and slightly charred.
  6. To assemble the bowl, place a serving of rice or quinoa at the bottom, top with sliced steak, grilled zucchini, and drizzle with the creamy sauce. Garnish with fresh parsley.

Notes

  • This dish can be made ahead by marinating the steak and preparing the sauce a day in advance.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For a lighter option, substitute sour cream with Greek yogurt.
