- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the sliced zucchini, bell pepper, red onion, cherry tomatoes, and mushrooms.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, oregano, salt, and pepper.
- Toss the vegetables until they are evenly coated with the oil and seasonings.
- Place the vegetables on the grill and cook for about 10-15 minutes, turning occasionally, until they are tender and have grill marks.
- Remove from the grill and serve warm on a platter.
