Description

Ingredients

  • 1 cup corn kernels (fresh or frozen)

  • 1 teaspoon cumin

  • 8 small corn tortillas
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a bowl, toss the zucchini slices and corn with olive oil, chili powder, cumin, salt, and pepper.
  3. Grill the zucchini and corn for about 5-7 minutes, turning occasionally, until tender and slightly charred.
  4. Warm the corn tortillas on the grill for about 30 seconds on each side.
  5. Assemble the tacos by placing grilled zucchini and corn on each tortilla.
  6. Top with avocado slices and fresh cilantro.
  7. Serve with lime wedges on the side.
