- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- 1/2 teaspoon green food coloring
- 1/2 teaspoon vanilla extract
- 1/2 cup butter, softened
- 2 cups powdered sugar (for filling)
- 1 teaspoon peppermint extract
- Red candy hearts (for decoration)
Instructions
- Preheat the oven to 300°F (150°C) and line a baking sheet with parchment paper.
- In a bowl, sift together almond flour and powdered sugar.
- In a separate bowl, beat egg whites until foamy, then gradually add granulated sugar until stiff peaks form.
- Fold in the almond flour mixture and green food coloring until well combined.
- Pipe small circles onto the prepared baking sheet and let them sit for 30 minutes to form a skin.
- Bake for 15-20 minutes, then let cool completely.
- For the filling, beat softened butter, powdered sugar, and peppermint extract until smooth.
- Sandwich the macarons with the filling and decorate with red candy hearts.
