Ingredients

  • 1 lb ground beef
  • 2 medium sweet potatoes, diced
  • 1 cup broccoli florets
  • 1 bell pepper, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, toss the diced sweet potatoes with olive oil, paprika, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet, heat a little olive oil over medium heat and sauté the onion and garlic until fragrant.
  5. Add the ground beef to the skillet and cook until browned.
  6. Stir in the broccoli and bell pepper, cooking until the vegetables are tender.
  7. Once the sweet potatoes are done, combine them with the beef and vegetable mixture.
