- 1 lb ground beef
- 2 medium sweet potatoes, diced
- 1 cup broccoli florets
- 1 bell pepper, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, toss the diced sweet potatoes with olive oil, paprika, salt, and pepper.
- Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a skillet, heat a little olive oil over medium heat and sauté the onion and garlic until fragrant.
- Add the ground beef to the skillet and cook until browned.
- Stir in the broccoli and bell pepper, cooking until the vegetables are tender.
- Once the sweet potatoes are done, combine them with the beef and vegetable mixture.
- Serve warm, garnished with fresh parsley.
