Description

This Guilt-Free Zucchini Pizza Casserole combines the rich flavors of pizza with a healthy twist, featuring layers of zucchini, ground meat, and melty cheese.


Ingredients

  • 2 medium zucchinis
  • 1 pound ground meat (beef, turkey, or chicken)
  • 2 cups mozzarella cheese, shredded
  • 1 cup marinara sauce
  • 1 teaspoon Italian seasoning
  • Salt and pepper, to taste
  • Optional toppings: pepperoni, bell peppers, onions, or olives

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Slice the zucchinis thinly and layer half of them on the bottom of a greased casserole dish.
  3. Brown the ground meat in a skillet over medium heat, seasoning it with Italian seasoning, salt, and pepper until fully cooked.
  4. Layer the cooked meat evenly over the zucchini slices.
  5. Pour marinara sauce over the meat, then sprinkle half of the mozzarella cheese on top.
  6. Add the remaining zucchini slices, followed by the rest of the marinara sauce and mozzarella cheese.
  7. Bake in the preheated oven for 30-35 minutes, or until the cheese is bubbly and golden.
  8. Let it cool slightly before serving.

Notes

For a lighter option, drain any excess fat from the cooked meat. Customize with your favorite toppings.
