Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, shredded coconut, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Drop tablespoon-sized balls of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
- Bake for 12-15 minutes or until the edges are lightly golden. Remove from the oven and let cool.
- While the cookies are cooling, prepare the lemon curd by whisking together lemon juice, lemon zest, sugar, and eggs in a saucepan over medium heat.
- Cook the mixture, stirring constantly, until it thickens and coats the back of a spoon (about 8-10 minutes). Remove from heat and stir in the butter until melted.
- Once the cookies are cool, create a small indentation in the center of each cookie and fill with lemon curd. Allow to set before serving.
