Ingredients

- 4 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1 cup low-sodium chicken or vegetable broth
- 1 cup milk (or a dairy-free alternative)
- 1/2 cup Greek yogurt
- 1 small onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sauté until translucent.
- Add broccoli florets and broth to the pot. Bring to a boil, then reduce heat and simmer until broccoli is tender.
- Using an immersion blender, blend the soup until smooth (or transfer to a blender in batches).
- Stir in milk and Greek yogurt, mixing well.
- Add shredded cheddar cheese and stir until melted and combined.
- Season with salt and pepper to taste. Serve hot.
Notes
- For a vegan version, substitute cheese and yogurt with plant-based alternatives.
- This soup can be stored in the refrigerator for up to 3 days.
