Description

Ingredients

  • 2 cups cottage cheese
  • 1 cup chopped spinach
  • 1 cup diced bell peppers
  • 1 cup chopped tomatoes
  • 1/2 cup grated cheese (optional)
  • 2 eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine cottage cheese, spinach, bell peppers, tomatoes, and grated cheese.
  3. In a separate bowl, whisk together eggs, garlic powder, onion powder, salt, and pepper.
  4. Pour the egg mixture into the cottage cheese and vegetable mixture and stir until well combined.
  5. Transfer the mixture to a greased baking dish.
  6. Bake for 30-35 minutes or until the top is golden and set.
  7. Let it cool for a few minutes before serving.
