Ingredients

- 2 cups cottage cheese
- 1 cup chopped spinach
- 1 cup diced bell peppers
- 1 cup chopped tomatoes
- 1/2 cup grated cheese (optional)
- 2 eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine cottage cheese, spinach, bell peppers, tomatoes, and grated cheese.
- In a separate bowl, whisk together eggs, garlic powder, onion powder, salt, and pepper.
- Pour the egg mixture into the cottage cheese and vegetable mixture and stir until well combined.
- Transfer the mixture to a greased baking dish.
- Bake for 30-35 minutes or until the top is golden and set.
- Let it cool for a few minutes before serving.
