Description

A delightful fusion of fluffy focaccia and sweet jam-filled donuts, perfect for brunch gatherings.


Ingredients

  • 1.75 cups Warm Water (105-115°F)
  • 2 tsp Sugar
  • 1 packet Active Dry Yeast
  • 2 cups Bread Flour
  • 2 cups All-Purpose Flour
  • 2 tsp Salt
  • 6 tbsp Olive Oil (divided)
  • 1 jar Raspberry Preserves
  • 2 cups Confectioners’ Sugar
  • 24 tbsp Whole Milk (as needed)

Instructions

  1. Combine warm water and sugar in a mixing bowl. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until bubbly.
  2. Whisk together the bread flour, all-purpose flour, and salt in a separate bowl.
  3. Pour the yeast mixture into the flour mixture and add 4 tablespoons of olive oil.
  4. Mix until a shaggy dough forms and knead for about 5-7 minutes until elastic.
  5. Shape the dough into a ball and let it rise in a greased bowl, covered with a damp cloth, for about an hour.
  6. Preheat the oven to 375°F (190°C) and punch down the risen dough.
  7. Transfer the dough to a prepared baking sheet lined with parchment paper, pressing your fingers into it to make dimples.
  8. Spread raspberry preserves in the center, leaving space around the edges.
  9. Drizzle remaining olive oil over the focaccia and sprinkle with salt, letting it rise for another 30 minutes.
  10. Bake for 25-30 minutes until golden and slightly crisp.
  11. Dust with confectioners’ sugar before serving.

Notes

Allow the dough ample time to rise for a light texture. Adjust ingredients to your taste with different jams if desired.
