Ingredients

- 1.75 cups Warm Water (105-115°F)
- 2 tsp Sugar
- 1 packet Active Dry Yeast
- 2 cups Bread Flour
- 2 cups All-Purpose Flour
- 2 tsp Salt
- 6 tbsp Olive Oil (divided)
- 1 jar Raspberry Preserves
- 2 cups Confectioners’ Sugar
- 2–4 tbsp Whole Milk (as needed)
Instructions
- Combine warm water and sugar in a mixing bowl. Sprinkle the active dry yeast over the top and let it sit for 5-10 minutes until bubbly.
- Whisk together the bread flour, all-purpose flour, and salt in a separate bowl.
- Pour the yeast mixture into the flour mixture and add 4 tablespoons of olive oil.
- Mix until a shaggy dough forms and knead for about 5-7 minutes until elastic.
- Shape the dough into a ball and let it rise in a greased bowl, covered with a damp cloth, for about an hour.
- Preheat the oven to 375°F (190°C) and punch down the risen dough.
- Transfer the dough to a prepared baking sheet lined with parchment paper, pressing your fingers into it to make dimples.
- Spread raspberry preserves in the center, leaving space around the edges.
- Drizzle remaining olive oil over the focaccia and sprinkle with salt, letting it rise for another 30 minutes.
- Bake for 25-30 minutes until golden and slightly crisp.
- Dust with confectioners’ sugar before serving.
Notes
Allow the dough ample time to rise for a light texture. Adjust ingredients to your taste with different jams if desired.
