    • 1 ½ cups all-purpose flour
    • ½ cup unsalted butter, softened
    • ¼ cup granulated sugar
    • 1 large egg yolk
    • 23 tablespoons cold water
  • Filling:
    • 2 cups ricotta cheese
    • 1 cup cream cheese, softened
    • ¾ cup granulated sugar
    • 3 large eggs
    • 1 teaspoon vanilla extract
    • 1 tablespoon lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, and sugar until crumbly. Add egg yolk and cold water, mixing until a dough forms.
  3. Press the dough into a 9-inch pie pan evenly across the bottom and up the sides. Prick the bottom with a fork.
  4. Bake the crust for 15 minutes or until lightly golden. Remove from the oven and let cool.
  5. In a large bowl, beat together ricotta cheese, cream cheese, and sugar until smooth.
  6. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and lemon juice.
  7. Pour the filling into the cooled crust and smooth the top.
  8. Bake for 40-45 minutes, or until the filling is set and the top is lightly golden. The center should slightly jiggle when shaken.
  9. Allow to cool at room temperature, then refrigerate for at least 2 hours before serving.
