Instructions

  1. Combine the flour, sourdough starter, warm water, salt, and sugar in a large bowl and mix until the dough comes together.
  2. Knead the dough vigorously for about 10 minutes until it becomes smooth and elastic.
  3. Place the kneaded dough in a greased bowl, cover it, and let it rise in a warm place for 4-8 hours, until it doubles in size.
  4. Preheat your oven to 425°F (220°C).
  5. Punch down the dough and divide it into 8 equal pieces, shaping each into a round ball with a hole in the center.
  6. Boil water in a large pot and add baking soda. Boil each bagel for 30 seconds on each side.
  7. Transfer the boiled bagels to a baking sheet lined with parchment paper and sprinkle with toppings.
  8. Bake in the preheated oven for 20-25 minutes until golden brown.
  9. Let the bagels cool slightly on a wire rack before slicing.
