Description

A delicious and healthy meal featuring tender chicken coated in honey mustard sauce served over broccoli rice.


Ingredients

  • 2 cups broccoli rice
  • 1 lb chicken breast, diced
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 tablespoon garlic, minced
  • 1 tablespoon soy sauce

Instructions

  1. In a bowl, mix honey, Dijon mustard, olive oil, garlic, soy sauce, salt, and pepper to create the marinade.
  2. Add the diced chicken to the marinade and let it sit for at least 30 minutes.
  3. While the chicken is marinating, prepare the broccoli rice by steaming or sautéing it until tender.
  4. Heat a skillet over medium heat and cook the marinated chicken until fully cooked and golden brown.
  5. Serve the cooked chicken over the broccoli rice and drizzle with any remaining honey mustard sauce.

Notes
