- 1/4 cup Dijon mustard

Instructions
- In a bowl, mix honey, Dijon mustard, olive oil, garlic, soy sauce, salt, and pepper to create the marinade.
- Add the diced chicken to the marinade and let it sit for at least 30 minutes.
- While the chicken is marinating, prepare the broccoli rice by steaming or sautéing it until tender.
- Heat a skillet over medium heat and cook the marinated chicken until fully cooked and golden brown.
- Serve the cooked chicken over the broccoli rice and drizzle with any remaining honey mustard sauce.
Notes
- For a spicier kick, add red pepper flakes to the marinade.
