  • For the Salmon Burgers:
    • 1 lb fresh salmon fillet, skin removed
    • 1/4 cup breadcrumbs

    • 1/2 teaspoon salt
    • 1/4 teaspoon black pepper
  • For the Crunchy Slaw:
    • 2 cups green cabbage, finely shredded
    • 1 cup carrots, grated
    • 1/4 cup red onion, thinly sliced
    • 1/4 cup mayonnaise
    • 1 tablespoon apple cider vinegar
    • 1 tablespoon honey
    • Salt and pepper to taste

Instructions

  1. Preheat your grill or stovetop pan to medium-high heat (about 375°F).
  2. In a bowl, finely chop the salmon fillet and combine it with breadcrumbs, honey, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until just combined.
  3. Form the mixture into 4 equal patties, about 1 inch thick.
  4. Grill the patties for 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
  5. While the burgers are cooking, prepare the slaw by mixing cabbage, carrots, red onion, mayonnaise, apple cider vinegar, honey, salt, and pepper in a large bowl.
  6. Once the burgers are done, assemble them on buns with a generous scoop of crunchy slaw on top.
