- For the Crunchy Slaw:
- 2 cups green cabbage, finely shredded
- 1 cup carrots, grated
- 1/4 cup red onion, thinly sliced
- 1/4 cup mayonnaise
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
Instructions
- Preheat your grill or stovetop pan to medium-high heat (about 375°F).
- In a bowl, finely chop the salmon fillet and combine it with breadcrumbs, honey, Dijon mustard, lemon juice, garlic powder, salt, and pepper. Mix until just combined.
- Form the mixture into 4 equal patties, about 1 inch thick.
- Grill the patties for 4-5 minutes on each side, or until they are cooked through and have nice grill marks.
- While the burgers are cooking, prepare the slaw by mixing cabbage, carrots, red onion, mayonnaise, apple cider vinegar, honey, salt, and pepper in a large bowl.
- Once the burgers are done, assemble them on buns with a generous scoop of crunchy slaw on top.
