Description

Ina Garten’s Summer Garden Pasta is a vibrant dish that bursts with the freshness of summer vegetables. The creamy sauce envelops the al dente pasta, creating a delightful contrast of textures and flavors that dance on your palate.

Ingredients

Scale
  • 8 ounces of pasta (such as fusilli or penne)
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 zucchini, diced
  • 1 yellow squash, diced
  • 1 red bell pepper, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook the pasta according to package instructions until al dente, about 8-10 minutes.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat.
  3. Add the diced onion and sauté until translucent, about 3-4 minutes.
  4. Stir in the minced garlic and cook for an additional minute until fragrant.
  5. Add the zucchini, yellow squash, and red bell pepper to the skillet, cooking until tender, about 5-7 minutes.
  6. Mix in the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
  7. Reduce the heat to low and pour in the heavy cream, stirring to combine.
  8. Add the cooked pasta to the skillet, tossing to coat in the creamy sauce. Stir in the grated Parmesan cheese and season with salt and pepper to taste.
  9. Serve immediately, garnished with fresh basil leaves.

Notes

  • This dish can be made ahead of time; simply store the pasta and sauce separately in airtight containers in the refrigerator for up to 3 days.
  • To reheat, warm the sauce gently on the stove and add the pasta, stirring until heated through.
  • For a lighter version, substitute heavy cream with half-and-half or a plant-based cream alternative.
