- Prepare the Crepe Batter: In a large mixing bowl, whisk together the flour and salt. Create a well in the center and add the eggs, melted butter, and milk. Gradually mix until smooth, ensuring there are no lumps. Allow the batter to rest for at least 30 minutes.
- Cook the Crepes: Heat your non-stick skillet over medium heat. Lightly grease the surface with butter. Pour approximately 1/4 cup of batter into the pan and quickly swirl it around to coat the bottom. Cook for about 1-2 minutes until the edges begin to lift and the underside turns golden. Carefully flip and cook for another minute. Stack the crepes on a plate and cover to keep warm.
- Make the Cream Filling: In a separate bowl, combine the heavy cream, mascarpone or cream cheese, and vanilla extract. Using an electric mixer, whip until stiff peaks form. Add powdered sugar to taste, then gently fold in the fresh raspberries.
- Assemble the Crepes: Take a warm crepe and place a generous spoonful of the raspberry vanilla cream mixture down the center. Fold the crepe in half, then tuck the edges to form a pocket. Repeat with each crepe.
