Instructions

  1. Rinse the sushi rice under cold water until the water runs clear, about 2-3 minutes.
  2. In a medium saucepan, combine the rinsed rice and water. Bring to a boil over medium heat, then reduce to low, cover, and simmer for 18-20 minutes until the water is absorbed.
  3. Remove from heat and let the rice sit, covered, for 10 minutes.
  4. In a small bowl, mix rice vinegar, sugar, and salt until dissolved. Gently fold this mixture into the cooked rice and let it cool to room temperature.
  5. Lay a sheet of plastic wrap on a bamboo sushi mat. Spread a thin layer of sushi rice over the plastic wrap, leaving a 1-inch border at the top.
  6. Layer the prosciutto, burrata, arugula, and cherry tomatoes on top of the rice.
  7. Using the mat, carefully roll the sushi away from you, applying gentle pressure to form a tight roll.
  8. Once rolled, use a sharp knife to slice the sushi into 6-8 pieces. Serve with fresh basil and a drizzle of balsamic glaze.
