Description

A delicious and festive cheesecake designed to resemble a Jack-O’-Lantern, perfect for Halloween celebrations.


Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground ginger
  • Orange food coloring (optional)
  • Chocolate chips (for decoration)

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix graham cracker crumbs and melted butter until combined, then press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese and sugar until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and food coloring if using.
  6. Pour the cheesecake mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes or until the center is set but slightly jiggly.
  8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
  9. Refrigerate for at least 4 hours or overnight before serving.
  10. Decorate with chocolate chips to create a Jack-O’-Lantern face before serving.
