Description

A vibrant dish featuring tender chicken breasts paired with juicy peaches and a spicy kick from jalapeños, all wrapped in a sweet and tangy honey glaze.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 jalapeños, diced
  • 3 peaches, diced
  • 1/4 cup honey
  • 1/4 cup apple cider vinegar
  • 1/4 cup water
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper on both sides.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Add the chicken breasts to the skillet, searing for 3-4 minutes on each side until golden brown; remove and set aside.
  5. Toss in the diced jalapeños and peaches into the same skillet, cooking for 2-3 minutes.
  6. Whisk together honey, apple cider vinegar, water, and cornstarch in a small bowl.
  7. Pour the honey mixture over the cooked jalapeños and peaches; simmer.
  8. Return the chicken to the skillet and spoon some sauce over the top.
  9. Transfer to the preheated oven, baking for 20-25 minutes until internal temperature reaches 165°F (74°C).
  10. Let it rest for a few minutes, then serve hot.

Notes

For a milder dish, remove seeds from jalapeños. Leftovers can be stored for up to 3 days in the refrigerator or frozen for up to 2 months.
