- 4 chicken breasts, boneless and skinless
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 jalapeños, diced
- 3 peaches, diced
- 1/4 cup honey
- 1/4 cup apple cider vinegar
- 1/4 cup water
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper on both sides.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add the chicken breasts to the skillet, searing for 3-4 minutes on each side until golden brown; remove and set aside.
- Toss in the diced jalapeños and peaches into the same skillet, cooking for 2-3 minutes.
- Whisk together honey, apple cider vinegar, water, and cornstarch in a small bowl.
- Pour the honey mixture over the cooked jalapeños and peaches; simmer.
- Return the chicken to the skillet and spoon some sauce over the top.
- Transfer to the preheated oven, baking for 20-25 minutes until internal temperature reaches 165°F (74°C).
- Let it rest for a few minutes, then serve hot.
Notes
For a milder dish, remove seeds from jalapeños. Leftovers can be stored for up to 3 days in the refrigerator or frozen for up to 2 months.
