Ingredients

  • ¼ cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 1 tablespoon coconut oil (melted)
  • 2 tablespoons cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your donut pan generously with coconut oil or baking spray.
  2. In a mixing bowl, whisk together the almond flour, erythritol, baking powder, cinnamon, and salt until evenly blended.
  3. In a separate bowl, mix together the eggs, unsweetened applesauce, vanilla extract, and melted coconut oil until fully combined.
  4. Carefully combine the wet and dry ingredients until the batter forms, being mindful not to overmix.
  5. Fill each donut mold with the batter, approximately ¾ full.
  6. Bake for 15-20 minutes, or until a toothpick comes out clean.
