Description

Tender beef meatballs simmered in a creamy coconut milk curry sauce, bursting with aromatic spices and served over rice or with flatbread.


Ingredients

  • 1 pound ground beef
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 teaspoon paprika
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped
  • 1 can (14 oz) coconut milk
  • 2 tablespoons curry powder
  • 2 tablespoons vegetable oil
  • Fluffy rice or flatbread for serving

Instructions

  1. Combine the ground beef, onion, garlic, ginger, cumin, coriander, paprika, cinnamon, salt, pepper, and parsley in a large bowl. Mix until fully incorporated.
  2. Form the mixture into small meatballs, each about 1 inch in diameter.
  3. Heat vegetable oil in a large skillet over medium heat. Gently place the meatballs in the pan and cook until browned on all sides, about 5-7 minutes.
  4. Transfer the browned meatballs to a plate and set aside.
  5. Pour in the coconut milk and stir in the curry powder. Mix until fully combined.
  6. Return the meatballs to the skillet and simmer for 15-20 minutes.
  7. Serve over fluffy rice or with warm flatbread.

Notes

Make-ahead tips: Prepare the meat mixture a day in advance. For a healthier option, use an air fryer for the meatballs.
