Tender beef meatballs simmered in a creamy coconut milk curry sauce, bursting with aromatic spices and served over rice or with flatbread.

- 1 pound ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1 teaspoon paprika
- 1/2 teaspoon cinnamon
- Salt and pepper to taste
- 1/4 cup fresh parsley, chopped
- 1 can (14 oz) coconut milk
- 2 tablespoons curry powder
- 2 tablespoons vegetable oil
- Fluffy rice or flatbread for serving
Instructions
- Combine the ground beef, onion, garlic, ginger, cumin, coriander, paprika, cinnamon, salt, pepper, and parsley in a large bowl. Mix until fully incorporated.
- Form the mixture into small meatballs, each about 1 inch in diameter.
- Heat vegetable oil in a large skillet over medium heat. Gently place the meatballs in the pan and cook until browned on all sides, about 5-7 minutes.
- Transfer the browned meatballs to a plate and set aside.
- Pour in the coconut milk and stir in the curry powder. Mix until fully combined.
- Return the meatballs to the skillet and simmer for 15-20 minutes.
- Serve over fluffy rice or with warm flatbread.
Notes
Make-ahead tips: Prepare the meat mixture a day in advance. For a healthier option, use an air fryer for the meatballs.
