- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup green onions, chopped
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 2 tbsp brown sugar
- 1 tbsp sesame oil
- 1 tsp ginger, grated
- 1 tsp black pepper
- 8 small taco shells
- 1 cup shredded cabbage
- 1/2 cup kimchi
- 1/4 cup cilantro, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, green onions, garlic, soy sauce, brown sugar, sesame oil, ginger, and black pepper.
- Form the mixture into small meatballs, about 1 inch in diameter.
- Place the meatballs on a baking sheet and bake for 20-25 minutes, or until cooked through.
- While the meatballs are baking, prepare the taco shells and toppings.
- Once the meatballs are done, assemble the tacos by placing meatballs in the taco shells and topping with shredded cabbage, kimchi, and cilantro.
- Serve immediately and enjoy!
Notes
- For a spicier kick, add some Sriracha sauce to the meatball mixture.
- These tacos can be served with a side of rice for a more filling meal.
- Leftover meatballs can be stored in the refrigerator for up to 3 days.
