- 1/2 cup sugar
- 1/2 cup heavy cream
- 1 tsp vanilla extract
- 1 tsp pumpkin spice
- 1/2 cup crushed graham crackers
- 2 tbsp melted butter
- Whipped cream for topping
Instructions
- In a mixing bowl, beat the cream cheese until smooth.
- Add the pumpkin puree, sugar, vanilla extract, and pumpkin spice. Mix until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
- In a separate bowl, combine crushed graham crackers and melted butter.
- In serving cups, layer the graham cracker mixture, followed by the pumpkin cheesecake mixture.
- Repeat the layers until the cups are filled.
- Top with whipped cream and a sprinkle of pumpkin spice.
- Chill in the refrigerator for at least 2 hours before serving.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Can be made a day in advance for convenience.
