Ingredients

  • 8 oz cream cheese, softened
  • 1 cup pumpkin puree
  • 1/2 cup sugar
  • 1/2 cup heavy cream
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • 1/2 cup crushed graham crackers
  • 2 tbsp melted butter
  • Whipped cream for topping

Instructions

  1. In a mixing bowl, beat the cream cheese until smooth.
  2. Add the pumpkin puree, sugar, vanilla extract, and pumpkin spice. Mix until well combined.
  3. In another bowl, whip the heavy cream until stiff peaks form.
  4. Gently fold the whipped cream into the pumpkin mixture until fully incorporated.
  5. In a separate bowl, combine crushed graham crackers and melted butter.
  6. In serving cups, layer the graham cracker mixture, followed by the pumpkin cheesecake mixture.
  7. Repeat the layers until the cups are filled.
  8. Top with whipped cream and a sprinkle of pumpkin spice.
  9. Chill in the refrigerator for at least 2 hours before serving.

Notes

  • For a gluten-free version, use gluten-free graham crackers.
