Description

This Layered Sweet Potato Lasagna is a vibrant dish that combines the earthy sweetness of roasted sweet potatoes with creamy ricotta and tangy marinara sauce. Each layer offers a delightful contrast of textures, from the tender sweet potatoes to the smooth, rich cheese, creating a comforting and satisfying experience with every bite.


Ingredients

  • Sweet Potatoes: 4 medium, peeled and thinly sliced
  • Ricotta Cheese: 2 cups
  • Shredded Mozzarella Cheese: 2 cups
  • Marinara Sauce: 3 cups
  • Parmesan Cheese: 1 cup, grated
  • Fresh Spinach: 2 cups, chopped
  • Olive Oil: 2 tablespoons
  • Garlic: 2 cloves, minced
  • Salt: 1 teaspoon
  • Pepper: 1/2 teaspoon
  • Nutmeg: 1/4 teaspoon

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  3. Add chopped spinach, salt, pepper, and nutmeg; cook until wilted, about 3-4 minutes.
  4. In a baking dish, spread a layer of marinara sauce on the bottom.
  5. Layer half of the sweet potato slices over the sauce, followed by half of the ricotta mixture, half of the spinach, and a sprinkle of mozzarella.
  6. Repeat the layers, finishing with a layer of sweet potatoes topped with marinara sauce and remaining mozzarella and Parmesan cheese.
  7. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
  8. Let it cool for 10 minutes before slicing and serving.

  • This lasagna can be assembled a day in advance and stored in the refrigerator before baking.
  • Leftovers can be stored in an airtight container in the fridge for up to 4 days.
  • For a vegan option, substitute ricotta with cashew cheese and mozzarella with vegan cheese.
