Ingredients

Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
- Add chopped spinach, salt, pepper, and nutmeg; cook until wilted, about 3-4 minutes.
- In a baking dish, spread a layer of marinara sauce on the bottom.
- Layer half of the sweet potato slices over the sauce, followed by half of the ricotta mixture, half of the spinach, and a sprinkle of mozzarella.
- Repeat the layers, finishing with a layer of sweet potatoes topped with marinara sauce and remaining mozzarella and Parmesan cheese.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15-20 minutes until cheese is bubbly and golden.
- Let it cool for 10 minutes before slicing and serving.
