Lemon Bars are a delightful dessert featuring a tangy lemon filling on a buttery shortbread crust, perfect for any occasion.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup powdered sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, butter, and powdered sugar to form the crust.
  3. Press the mixture into the bottom of a greased 8×8 inch baking dish.
  4. Bake the crust for 15 minutes until lightly golden.
  5. In another bowl, whisk together granulated sugar, eggs, lemon juice, lemon zest, baking powder, and salt.
  6. Pour the lemon mixture over the baked crust.
  7. Bake for an additional 20-25 minutes until set.
  8. Allow to cool before slicing into bars.
  9. Dust with powdered sugar before serving, if desired.

Notes

  • For a stronger lemon flavor, add more lemon zest.
