Delicious lemon bars featuring a buttery shortbread crust and a tangy lemon filling, perfect for any gathering.


Ingredients

  • 1 cup unsalted butter, softened
  • 1/2 cup granulated sugar (for crust)
  • 2 cups all-purpose flour (for crust)
  • 1/4 teaspoon salt
  • 4 large eggs
  • 1 cup granulated sugar (for filling)
  • 2 teaspoons lemon zest
  • 1/2 cup fresh lemon juice
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 teaspoon baking powder
  • Powdered sugar (for dusting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish.
  2. Cream the softened butter with 1/2 cup of granulated sugar until creamy and fluffy.
  3. Mix in 2 cups of flour and 1/4 teaspoon of salt for a crumbly texture.
  4. Form the crust by pressing the mixture evenly into the bottom of the prepared baking dish.
  5. Bake the crust for 20 minutes or until lightly golden.
  6. Prepare the filling by whisking together the eggs, 1 cup of sugar, lemon zest, lemon juice, 1/4 cup flour, and baking powder.
  7. Pour the lemon mixture over the baked crust, spreading it evenly.
  8. Bake again for 20-25 minutes until the filling is set.
  9. Cool completely before dusting with powdered sugar.

Notes

Lemon bars can be made ahead and stored in the fridge for up to three days. They freeze well too.
