- 1 cup unsalted butter, softened
- 1/2 cup granulated sugar (for crust)
- 2 cups all-purpose flour (for crust)
- 1/4 teaspoon salt
- 4 large eggs
- 1 cup granulated sugar (for filling)
- 2 teaspoons lemon zest
- 1/2 cup fresh lemon juice
- 1/4 cup all-purpose flour (for filling)
- 1/2 teaspoon baking powder
- Powdered sugar (for dusting)
Instructions
- Preheat your oven to 350°F (175°C) and grease your 9×13 inch baking dish.
- Cream the softened butter with 1/2 cup of granulated sugar until creamy and fluffy.
- Mix in 2 cups of flour and 1/4 teaspoon of salt for a crumbly texture.
- Form the crust by pressing the mixture evenly into the bottom of the prepared baking dish.
- Bake the crust for 20 minutes or until lightly golden.
- Prepare the filling by whisking together the eggs, 1 cup of sugar, lemon zest, lemon juice, 1/4 cup flour, and baking powder.
- Pour the lemon mixture over the baked crust, spreading it evenly.
- Bake again for 20-25 minutes until the filling is set.
- Cool completely before dusting with powdered sugar.
Notes
Lemon bars can be made ahead and stored in the fridge for up to three days. They freeze well too.
