Ingredients

- 1 cup orzo pasta
- 1 lb shrimp, peeled and deveined
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 1/4 cup fresh basil, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and set aside.
- In a bowl, toss the shrimp with olive oil, lemon juice, lemon zest, salt, and pepper.
- Grill the shrimp over medium heat for 2-3 minutes on each side until cooked through.
- In a large bowl, combine the cooked orzo, grilled shrimp, basil, cherry tomatoes, and cucumber.
- Toss everything together and adjust seasoning if necessary.
- Serve chilled or at room temperature.
Notes
- For added flavor, marinate the shrimp for 30 minutes before grilling.
- This salad can be made ahead of time and stored in the refrigerator.
- Feel free to add other vegetables like bell peppers or avocados.
