Description

Ingredients

  • 1 cup orzo pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 1 lemon, juiced and zested
  • 1/4 cup fresh basil, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cucumber, diced
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and set aside.
  2. In a bowl, toss the shrimp with olive oil, lemon juice, lemon zest, salt, and pepper.
  3. Grill the shrimp over medium heat for 2-3 minutes on each side until cooked through.
  4. In a large bowl, combine the cooked orzo, grilled shrimp, basil, cherry tomatoes, and cucumber.
  5. Toss everything together and adjust seasoning if necessary.
  6. Serve chilled or at room temperature.

Notes

  • For added flavor, marinate the shrimp for 30 minutes before grilling.
