Ingredients

  • Kale: 1 large bunch, stems removed and leaves chopped
  • Lemon Dressing:

    • 1 teaspoon Dijon mustard
    • 1 clove garlic, minced
    • Salt and pepper to taste
  • Parmesan: 1/2 cup freshly grated
  • Almonds: 1/3 cup sliced, toasted
  • Optional Add-ins:
    • 1/2 cup cherry tomatoes, halved
    • 1 avocado, diced

Instructions

  1. In a small bowl, whisk together the lemon juice, olive oil, Dijon mustard, minced garlic, salt, and pepper until emulsified.
  2. In a large bowl, add the chopped kale and drizzle with half of the lemon dressing.
  3. Massage the kale with your hands for about 2-3 minutes until it becomes tender and slightly wilted.
  4. Add the grated Parmesan cheese and toasted almonds to the kale, then pour in the remaining dressing.
  5. Toss everything together until well combined and serve immediately, or let it sit for 10 minutes to enhance the flavors.

Notes
