Instructions
- Preheat your oven to 350°F (175°C).
- Whisk together the flour, baking soda, and salt in a bowl.
- Cream together the softened butter and granulated sugar until smooth and fluffy (3 to 5 minutes).
- Beat in the egg, lemon zest, lemon juice, and vanilla extract until well combined.
- Gradually mix in the dry ingredients until just combined.
- Scoop tablespoon-sized amounts of dough onto a lined baking sheet, leaving 2 inches of space between each.
- Bake for 10-12 minutes until the edges are golden and centers remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack.
- Dust with powdered sugar before serving.
Notes
For vegan cookies, substitute coconut oil for butter. Customize with chocolate chips or nuts.
