Description

This Light Ham Potato Chowder is a creamy, comforting bowl of goodness that warms the soul. The velvety texture of the chowder, combined with the savory notes of ham and the subtle sweetness of potatoes, creates a delightful flavor experience that is both satisfying and light on the palate.

Ingredients

Scale
  • Base:
    • 4 cups low-sodium chicken broth
    • 1 cup unsweetened almond milk
  • Vegetables:
    • 2 cups diced potatoes (Yukon Gold or Russet)
    • 1 cup diced carrots
    • 1 cup diced celery
    • 1 small onion, finely chopped
  • Protein:
    • 1 cup diced cooked ham
  • Seasonings:
    • 1 teaspoon dried thyme
    • 1 teaspoon garlic powder
    • Salt and pepper to taste
  • Thickener:
    • 2 tablespoons cornstarch mixed with 2 tablespoons cold water

Instructions

  1. In a large pot, combine the chicken broth, almond milk, diced potatoes, carrots, celery, and onion. Bring to a boil over medium-high heat.
  2. Once boiling, reduce the heat to medium-low and let it simmer for 15-20 minutes, or until the vegetables are tender.
  3. Add the diced ham, thyme, garlic powder, salt, and pepper. Stir well and let it cook for an additional 5 minutes.
  4. In a small bowl, mix the cornstarch with cold water until smooth. Gradually stir this mixture into the chowder, cooking for another 2-3 minutes until the chowder thickens slightly.
  5. Remove from heat and let it sit for a few minutes before serving. Adjust seasoning if necessary.

Notes

  • This chowder can be made ahead of time and stored in the refrigerator for up to 3 days.
  • To freeze, allow the chowder to cool completely, then transfer to an airtight container and freeze for up to 2 months. Reheat on the stove over low heat.
  • For a vegetarian version, substitute the ham with smoked tempeh or omit it entirely and add more vegetables.
