Ingredients
Scale
- Base:
- 4 cups low-sodium chicken broth
- 1 cup unsweetened almond milk
- Vegetables:
- 2 cups diced potatoes (Yukon Gold or Russet)
- 1 cup diced carrots
- 1 cup diced celery
- 1 small onion, finely chopped
- Protein:
- 1 cup diced cooked ham
- Seasonings:
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Thickener:
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water
Instructions
- In a large pot, combine the chicken broth, almond milk, diced potatoes, carrots, celery, and onion. Bring to a boil over medium-high heat.
- Once boiling, reduce the heat to medium-low and let it simmer for 15-20 minutes, or until the vegetables are tender.
- Add the diced ham, thyme, garlic powder, salt, and pepper. Stir well and let it cook for an additional 5 minutes.
- In a small bowl, mix the cornstarch with cold water until smooth. Gradually stir this mixture into the chowder, cooking for another 2-3 minutes until the chowder thickens slightly.
- Remove from heat and let it sit for a few minutes before serving. Adjust seasoning if necessary.
Notes
- This chowder can be made ahead of time and stored in the refrigerator for up to 3 days.
- To freeze, allow the chowder to cool completely, then transfer to an airtight container and freeze for up to 2 months. Reheat on the stove over low heat.
- For a vegetarian version, substitute the ham with smoked tempeh or omit it entirely and add more vegetables.
