A creamy and delicious Loaded Broccoli Cheddar Soup that is perfect for a comforting meal.


Ingredients

  • 4 cups broccoli florets
  • 1 cup shredded carrots
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded cheddar cheese
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add broccoli florets and shredded carrots, cook for about 5 minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and simmer for 15 minutes until vegetables are tender.
  6. Using an immersion blender, blend the soup until smooth.
  7. Stir in heavy cream and shredded cheddar cheese until melted and combined.
  8. Season with salt and pepper to taste.
  9. Serve hot and enjoy!

Notes

  • For a thicker soup, blend more of the broccoli.
