- 4 large russet potatoes
- 8 slices of bacon
- 1 cup shredded cheddar cheese
- 1/4 cup chopped green onions
- Sour cream (for serving)
- Salt and pepper to taste
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Wash the potatoes and poke holes in them with a fork.
- Rub them with olive oil, salt, and pepper.
- Bake the potatoes for about 45 minutes, or until tender.
- Remove them from the oven and let them cool slightly.
- Cut each potato in half lengthwise and scoop out most of the flesh.
- Cook the bacon until crispy, then chop it into small pieces.
- Place the potato skins on a baking sheet, and sprinkle cheese and bacon into each half.
- Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
- Remove from the oven, top with green onions, and serve with sour cream.

Make-ahead convenience: Bake potatoes in advance and store in the fridge until ready to assemble and bake.
