Description

Indulge in crispy loaded potato skins topped with bacon, cheese, and green onions, perfect for sharing at any gathering.


Ingredients

Scale
  • 4 large russet potatoes
  • 8 slices of bacon
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • Sour cream (for serving)
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the potatoes and poke holes in them with a fork.
  3. Rub them with olive oil, salt, and pepper.
  4. Bake the potatoes for about 45 minutes, or until tender.
  5. Remove them from the oven and let them cool slightly.
  6. Cut each potato in half lengthwise and scoop out most of the flesh.
  7. Cook the bacon until crispy, then chop it into small pieces.
  8. Place the potato skins on a baking sheet, and sprinkle cheese and bacon into each half.
  9. Bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  10. Remove from the oven, top with green onions, and serve with sour cream.

Notes

Make-ahead convenience: Bake potatoes in advance and store in the fridge until ready to assemble and bake.
