- 6 large eggs
- 1 cup shredded cheese (cheddar, mozzarella, or cream cheese)
- 4 slices crispy bacon or sausage
- Salt & pepper to taste
- 1 tablespoon olive oil or butter
Instructions
- Whisk the eggs in a bowl with a pinch of salt and a dash of pepper until fully blended.
- Prepare the skillet by heating oil or butter over medium heat.
- Cook the whisked eggs in the skillet for 2-3 minutes until edges set.
- Add shredded cheese and layer with crispy bacon or sausage.
- Roll the egg encasing the fillings using a spatula.
- Melt the cheese by returning the roll up to the skillet, seam-side down for another minute.
- Slice into pieces and serve warm.
Notes
These roll ups can be made ahead and stored in the fridge for up to 3 days, or frozen for a month. Reheat gently for best results.
