Ingredients

Scale
  • For the Mac and Cheese:
    • 8 oz elbow macaroni
    • 2 cups sharp cheddar cheese, shredded
    • 1 cup milk
    • 2 tbsp butter
    • 2 tbsp all-purpose flour
    • 1/2 tsp garlic powder
    • 1/2 tsp onion powder
    • Salt and pepper to taste
  • For the Burger Filling:
    • 1 lb ground beef
    • 4 slices bacon, cooked and crumbled
    • 1/2 tsp smoked paprika
    • Salt and pepper to taste
  • For the Rolls:
    • 1 package of spring roll wrappers
    • Oil for frying

Instructions

  1. Cook the elbow macaroni according to package instructions, drain, and set aside.
  2. In a saucepan, melt butter over medium heat, whisk in flour, and cook for 1-2 minutes until golden.
  3. Gradually add milk, stirring constantly until the mixture thickens, about 5 minutes.
  4. Stir in cheese, garlic powder, onion powder, salt, and pepper until melted and smooth.
  5. Add the cooked macaroni to the cheese sauce and mix well.
  6. In a skillet, cook the ground beef over medium heat, seasoning with smoked paprika, salt, and pepper until browned, about 7-10 minutes. Stir in crumbled bacon.
  7. Combine the mac and cheese with the beef and bacon mixture, mixing thoroughly.
  8. Place a spoonful of the mixture onto a spring roll wrapper, fold, and roll tightly. Seal the edges with a bit of water.
  9. Heat oil in a deep fryer or large pot to 350°F (175°C). Fry the rolls in batches until golden brown, about 3-4 minutes per side.
  10. Remove from oil and drain on paper towels before serving.

Notes

  • Make-ahead: You can prepare the mac and cheese and burger filling a day in advance and assemble the rolls just before frying.
  • Storage: Store any leftover rolls in an airtight container in the refrigerator for up to 3 days.
  • Substitutions: Use turkey or plant-based ground meat for a lighter option, or swap out cheddar for your favorite cheese.
