- 2 Chicken Breasts
- 8 oz Pasta (Fettuccine or Penne)
- 1 Cup Sundried Tomatoes
- 2 Cups Fresh Spinach
- 1/2 Cup Heavy Cream
- 1 Cup Chicken Broth
- 1/4 Cup Fresh Basil
- 2 Tablespoons Olive Oil
- Salt and Pepper to Taste
- Parmesan Cheese for Serving
Instructions
- Begin by cooking the pasta according to the package instructions until al dente. Drain and set aside, but don’t forget to save a splash of the starchy pasta water for later!
- In a large skillet, heat the olive oil over medium heat. Season the chicken breasts with salt and pepper on both sides before gently placing them in the skillet. Sear until golden brown and thoroughly cooked, about 6-7 minutes per side. Remove the chicken from the skillet and set aside.
- Using the same skillet, add the chopped sun-dried tomatoes and chicken broth. Bring to a simmer, allowing those flavors to marry beautifully.
- Reduce the heat slightly and stir in the heavy cream and fresh spinach. Let it simmer for about 2-3 minutes until the spinach wilts and the sauce thickens.
- Return the chicken to the skillet, spooning the rich sauce generously over top as you infuse flavor back into each tender bite.
- Now, add the cooked pasta into the skillet. Toss gently to combine, ensuring the noodles love every bit of that creaminess. If the sauce appears too thick, add a splash of the reserved pasta water.
- Stir in the chopped fresh basil and taste, adjusting seasoning with salt and pepper if needed.
- Serve hot, finished with a generous sprinkle of Parmesan cheese that melts into the warmth of the dish.
