Description

The Mascarpone Honey Pistachio Torte is a luxurious dessert that combines the creamy richness of mascarpone cheese with the delicate sweetness of honey, all enveloped in a nutty pistachio crust.   • Crust:
    • 1 ½ cups pistachios, shelled and finely ground
    • ½ cup unsalted butter, melted
    • ¼ cup granulated sugar
    • 1 teaspoon vanilla extract
  • Filling:
    • 2 cups mascarpone cheese, at room temperature
    • ½ cup honey
    • 1 teaspoon vanilla extract
    • 1 cup heavy cream
    • 2 tablespoons powdered sugar
  • Topping:
    • ½ cup chopped pistachios
    • 2 tablespoons honey, for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the ground pistachios, melted butter, granulated sugar, and vanilla extract until well mixed.
  3. Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust.
  4. Bake the crust for 10-12 minutes or until lightly golden. Remove from the oven and let it cool completely.
  5. In a large bowl, whisk together the mascarpone cheese, honey, and vanilla extract until smooth.
  6. In a separate bowl, whip the heavy cream and powdered sugar until stiff peaks form.
  7. Gently fold the whipped cream into the mascarpone mixture until fully combined.
  8. Pour the filling over the cooled crust and smooth the top with a spatula.
  9. Refrigerate the torte for at least 4 hours or until set.
  10. Before serving, sprinkle the chopped pistachios on top and drizzle with honey.
