- 1 cup couscous
- 1 1/4 cups vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup Kalamata olives, pitted and sliced
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a saucepan, bring the vegetable broth to a boil.
- Add the couscous, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and let it cool.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, olives, feta cheese, and parsley.
- Add the cooled couscous to the vegetable mixture.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Serve chilled or at room temperature.

- Feel free to add other vegetables like bell peppers or spinach.
