Description

These Mediterranean Quesadillas are a delightful fusion of creamy spinach, tangy feta, and gooey mozzarella, all nestled between crispy, golden tortillas. Each bite offers a satisfying crunch followed by a burst of savory flavors that dance on your palate, making them an irresistible treat for any occasion.


Ingredients

  • Tortillas: 4 large flour tortillas
  • Cheese: 1 cup shredded mozzarella cheese
  • Feta: 1/2 cup crumbled feta cheese
  • Spinach: 2 cups fresh spinach, chopped
  • Red Onion: 1/2 medium red onion, thinly sliced
  • Olive Oil: 2 tablespoons for cooking
  • Garlic: 2 cloves, minced
  • Salt: 1/2 teaspoon
  • Pepper: 1/4 teaspoon

Instructions

  1. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  2. Add the minced garlic and sliced red onion, sautéing until the onion is translucent, about 3-4 minutes.
  3. Stir in the chopped spinach, cooking until wilted, approximately 2 minutes.
  4. Remove the skillet from heat and mix in the feta cheese, salt, and pepper.
  5. Heat another tablespoon of olive oil in the skillet over medium heat.
  6. Place one tortilla in the skillet, and evenly spread half of the spinach mixture over one half of the tortilla.
  7. Sprinkle half of the mozzarella cheese on top of the spinach mixture, then fold the tortilla over.
  8. Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
  9. Repeat with the remaining tortillas and filling.
  10. Slice into wedges and serve warm.

  • Make-ahead: The spinach mixture can be prepared a day in advance and stored in the refrigerator.
  • Storage: Leftover quesadillas can be stored in an airtight container in the fridge for up to 3 days.
