Ingredients
- Tortillas: 4 large flour tortillas
- Cheese: 1 cup shredded mozzarella cheese
- Feta: 1/2 cup crumbled feta cheese
- Spinach: 2 cups fresh spinach, chopped
- Red Onion: 1/2 medium red onion, thinly sliced
- Olive Oil: 2 tablespoons for cooking
- Garlic: 2 cloves, minced
- Salt: 1/2 teaspoon
- Pepper: 1/4 teaspoon
Instructions
- In a large skillet, heat 1 tablespoon of olive oil over medium heat.
- Add the minced garlic and sliced red onion, sautéing until the onion is translucent, about 3-4 minutes.
- Stir in the chopped spinach, cooking until wilted, approximately 2 minutes.
- Remove the skillet from heat and mix in the feta cheese, salt, and pepper.
- Heat another tablespoon of olive oil in the skillet over medium heat.
- Place one tortilla in the skillet, and evenly spread half of the spinach mixture over one half of the tortilla.
- Sprinkle half of the mozzarella cheese on top of the spinach mixture, then fold the tortilla over.
- Cook for 3-4 minutes on each side, or until the tortilla is golden brown and the cheese is melted.
- Repeat with the remaining tortillas and filling.
- Slice into wedges and serve warm.
