Description

The Mediterranean Steak Bowl is a vibrant and hearty dish that combines tender, juicy steak with a medley of fresh vegetables and zesty flavors.   • Steak: 1 lb flank steak, trimmed and cut into strips
  • Marinade:
    • 1/4 cup olive oil
    • 2 tablespoons red wine vinegar
    • 2 cloves garlic, minced
    • 1 teaspoon dried oregano
    • 1 teaspoon salt
    • 1/2 teaspoon black pepper
  • Vegetables:
    • 2 cups cooked quinoa
    • 1 cup cherry tomatoes, halved
    • 1 cucumber, diced
    • 1/2 red onion, thinly sliced
    • 1 cup baby spinach
  • Feta Cheese: 1/2 cup crumbled feta cheese
  • Olives: 1/3 cup Kalamata olives, pitted and sliced

Instructions

  1. In a bowl, whisk together olive oil, red wine vinegar, garlic, oregano, salt, and pepper to create the marinade.
  2. Add the flank steak to the marinade, ensuring it is well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. Preheat a grill or skillet over medium-high heat (about 400°F).
  4. Remove the steak from the marinade and discard the marinade. Grill the steak for 4-5 minutes on each side, or until it reaches your desired doneness (medium-rare is about 135°F).
  5. Let the steak rest for 5 minutes before slicing it against the grain.
  6. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red onion, and baby spinach.
  7. Top the quinoa mixture with sliced steak, crumbled feta, and olives.
  8. Drizzle with additional olive oil and serve immediately.

Notes

  • This dish can be made ahead by marinating the steak and preparing the quinoa and vegetables in advance. Store in the refrigerator for up to 3 days.
